Lamb Burger
Ground lamb seasoned with rosemary makes a hearty burger that is just a little exotic. Served in pita, with a tangy Greek cheese, it’s a fun option for a barbecue party or easy dinner.

Makes 8, 1/4-lb. burgers:
Mushroom Brie Burger 2 lbs. ground lamb (or 1 lb. ground chuck combined with 1 lb. ground lamb)
2 tbsp. minced Italian parsley
2 tsp. minced fresh rosemary
1/4 cup chopped onion
2 garlic cloves, minced
1 tbsp. lemon juice
1 tbsp. olive oil
1 tsp. Kosher salt
1/4 tsp. freshly ground black pepper
Lettuce
Tomatoes, sliced
Hummus, if desired
Toasted bun or pita bread
Optional: 4 oz. kasseri or feta cheese

Directions:
  1. In a bowl gently combine lamb, parsley, rosemary, onion, salt and pepper.
  2. Grill (or cook in a hot skillet) 4-5 minutes per side, turning once. Serve in toasted pita with fresh slices of tomato, lettuce leaves and hummus, if desired.
